I just realized that I haven’t shared any dessert recipes yet (shame on me!). Don’t worry, I’ll make it up to you. The last recipe of 2017 is one of my favourite sweet treats – Best Ever Ambrosia! If you are from New Zealand, there’s a good chance that you will instantly recognize this dessert. If not, then you’re totally missing out and it’s about time you make this sweet and creamy dessert (like now!). And yes, the NZ version is different to Ambrosia in the US (which I never had!). Basically, it’s raspberries with Greek yoghurt… and whipped cream… and marshmallows (I know, right?!). Ambrosia is not only incredibly delicious but also extremely versatile. Let me tell you why!
First, Ambrosia is the easiest dessert in the world. It’s a great recipe for last-minute planning and easy-peasy to whip up when you are pushed for time (it takes less than 10 minutes!). Just make sure to prepare your Ambrosia the night before (or in the morning), and refrigerate it for at least six hours before serving as you need the marshmallows to soften and blend with the other ingredients. Second, it’s one of those never-fail desserts. You could even put the kids in charge and they would be able to whip this up in a minute (yep, it’s that foolproof!). Third, this classic kiwi dessert is perfect for fancy dinner parties AND when feeding a big crowd (hint: New Year’s Eve!) AND it’s always a great bring along for potlucks and BBQs (and yes, sometimes I eat it all by myself at home!). Fourth, Ambrosia requires only four simple and easy-to-find ingredients (raspberries, Greek yoghurt, whipped cream, marshmallows) that you probably have on hand. Alternatively, you could replace the raspberries with whatever fresh or frozen berries you prefer. Serve in a large bowl or little glass jars (if you want to be a bit fancier!).
I’m telling you, Ambrosia is a big hit with kids and adults alike. Also, have I mentioned that it’s a great way to sneak fruits into your kids’ food? The little ones love it. Best Ever Ambrosia
Yield 6 servings
- 2 cups fresh raspberries, divided*
- 2 cups plain Greek yoghurt
- 1.5 cups cream, whipped
- 1 cup mini marshmallows
- Use a fork to mash half of the raspberries.
- In a bowl, fold together the yoghurt, whipped cream, and marshmallows.
- Add the mashed and whole raspberries and mix well.
- Cover with plastic wrap and refrigerate for a minimum of 6 hours (or overnight) till marshmallows have (almost) dissolved.
- Enjoy your homemade Ambrosia!
*If desired, raspberries can be substituted with other berries (e.g., blueberries, strawberries, blackberries etc.). You could use frozen berries BUT fresh berries are best.
