Well, hello there! I’m thrilled you stopped by my blog. I was inspired to start Lemon Thymes as a creative outlet to make more time for some of the things I enjoy most: homemade food and handmade clothes. I always loved cooking (and eating… obviously!). However, over the last few years, I’ve been so busy that I often forgot to make time for myself or I kept postponing things: “I’m going to cook tomorrow.” … “I’m going to finish sewing this dress next month.” … and so on – you get the idea!
Although I really enjoy cooking from scratch, it’s just so SO tempting to get takeaway on the way home instead of making the time to cook after a busy day. But then, when I do have the time, I love the whole process: the cooking itself, the get-together with good conversation, a glass (*cough* bottle) of wine, and – of course – the eating part. Since I’m a bit of a control freak (argh… yeah, I know!), I hope that this blog will help to keep me focused and track my progress. Also, I just love sharing my recipes and sewing projects with my family and friends (and you guys out there!). My main focus is on food since it’s still waaay quicker to cook a meal from scratch than to sew a garment from scratch. Anyway, watch out for those recipes and sewing projects!

Classic Green Pesto is my favourite pesto of all times and I make it all the time. I think everyone should make their own pesto. Seriously. It comes together in under 10 minutes (hurray!) and only requires 7 simple ingredients: basil, lemon, garlic, olive oil, pine nuts, parmesan, and salt. Throw everything in your blender or food processor. Blend or process. Tataaa! There you have it – your own easy-peasy homemade Classic Green Pesto!
It’s incredibly flavourful and much much MUCH better than any store-bought pesto I ever had. Also, you can easily adjust it to make it nut-free (substitute the pine nuts with sunflower or pumpkin seeds) or vegan (substitute the parmesan with nutritional yeast). I use it for pasta (obviously), veggie noodles, pizza, sandwiches (e.g. Green Pesto Sandwich with Goat Cheese & Avocado), or whatever else I can think of at the time. Enjoy!
Classic Green Pesto
Yield 3/4 cup
- 2 cups basil, packed
- 6 tbsp extra virgin olive oil*
- 5 tbsp pine nuts**
- 5 tbsp Parmesan Reggiano, freshly grated***
- 2 tsp lemon juice
- 1/4 tsp sea salt
- 1 garlic cloves
- Add all the Classic Green Pesto ingredients to a blender and blend until you reach a pesto consistency.
- While blending, scrape down the sides of the blender a few times to make sure there aren't any lumps of garlic or nuts remaining.
- Enjoy your homemade pesto!
*If needed, add extra olive oil.
**Can be substituted with sunflower/pumpkin seeds to make it nut-free.
***Can be substituted with nutritional yeast to make it vegan.
Variation: Use toasted walnuts instead of pine nuts.
