Ingredients

Instructions

  1. Preheat oven to 425 degrees F. (220 C).
  2. BOIL: In a big pot, boil potatoes (do NOT peel!) in salted water for about 20 minutes or until fork tender. Then, drain water and let them cool for 5 minutes.
  3. SMASH: Spray oil a baking sheet. Transfer the boiled potatoes to the baking sheet and lightly flatten the potatoes with a potato masher (or mason jar).
  4. DRIZZLE & SPRINKLE: Drizzle each potato with olive oil and sprinkle with salt and pepper.
  5. BAKE: Bake in oven for about 30 minutes or until crispy and golden brown.
  6. Serve immediately topped with Vegan Avocado Basil Pesto and/or Spring Onion Dip.

Notes

*Do NOT peel.

**Alternatively, you could use butter (it's delicious!) or spray oil (to reduce oil).
