This recipe is for all the caffeine freaks out there. I’m pretty well known for my little coffee addiction. To be honest, I would rather skip breakfast than coffee. Having Latte Macchiato Overnight Oats instead of skipping breakfast sounds like a good compromise, don’t you think?!
I’m going to share another one of my (current) favourite overnight oats recipes with you guys: Latte Macchiato Overnight Oats. It’s been quite popular with my folks so I decided it’s time to put it out there. Actually, this one was a special request from my best friend Eve. She’s got two little ones at home and has been sleep deprived pretty much for the last three years. As a result, she’s always looking for creative ways to sneak in some caffeine during the day. Challenge accepted!
To make the Latte Macchiato Overnight Oats, you will need seven simple ingredients: rolled oats, espresso, Half & Half, Greek Yoghurt, sweetened condensed milk, biscuits, and vanilla sugar. And yes, I know that this is definitely NOT a diet friendly recipe BUT it’s freakin’ cold and we all need some indulgence this time of the year (plenty of healthy recipes are coming your way again in spring/summer!). On the bright side, it’s quick and easy to prepare (which is super useful during the week when I have to go to work early and don’t feel like preparing breakfast!). Just mix everything together the day before, leave in fridge overnight, and tataa – breakfast is ready in the morning!
If you are looking for more overnight oatmeal recipes, make sure to check out my Chai Latte Overnight Oats. Eve’s three-year-old LOVES this version. I actually created a chocolate cake overnight oats recipe just for him but he ditched it for the Chai Latte Overnight Oats (yeah, I couldn’t believe it either!). For all the dessert people out there, have a look at my Blueberry Cheesecake Overnight Oats (Chris’ favourite!).
