We love eating this healthy Simple Green Salad with Sweet Balsamic Vinaigrette. Ingredients for a Simple Green Salad
You will only need a few healthy ingredients for this Simple Green Salad: mixed greens, spring onions, carrots, avocado, cucumber, bell pepper, cherry tomatoes, Kalamata olives, and 1 batch Sweet Balsamic Vinaigrette.
For the mixed greens, there are plenty of options to choose from. For example, you could use romaine, mesclun, arugula, butter lettuce, baby spinach, baby kale, iceberg lettuce, radicchio, mache, chicory etc. Simply pick a mix of your favourite greens.
For the Sweet Balsamic Vinaigrette, I always keep the ingredients (olive oil, Crema di Balsamico, maple syrup, Dijon mustard, garlic, sea salt, pepper) on hand in case I need a quick & easy last-minute salad dressing.
How to make a Simple Green Salad
Easy-Peasy. Simply combine all ingredients (except Sweet Balsamic Vinaigrette!) in a large bowl and mix well. Tataaa!
Now, for the dressing, you’ve got two options: (1) make it fresh, or (2) make it ahead of time. It really depends on how much time you’ve got on your hands. If you’re super busy, I recommend making a batch of the Sweet Balsamic Vinaigrette ahead of time as you can easily store it in the fridge (for up to 3 days!) until needed. Also, stocking your fridge with pre-made dressing makes it more likely that you’ll actually eat a healthy salad for lunch or dinner.
How to serve a Simple Green Salad
For serving, all you need to do is top your pre-mixed salad with your pre-made dressing OR serve the dressing on the side. Simple Green Salad with Sweet Balsamic Vinaigrette
Yield 6 servings
- 200 g mixed greens, washed*
- 5 spring onions, sliced
- 2 carrots, grated
- 1 avocado, sliced**
- 1/2 cucumber, sliced**
- 1/2 yellow bell pepper, chopped***
- 1/2 cup cherry tomatoes, quartered
- 1/2 cup Kalamata olives
- 1 batch Sweet Balsamic Vinaigrette
- In a large bowl, combine all ingredients (except Sweet Balsamic Vinaigrette!). Mix well.
- For serving, top salad with dressing OR serve dressing on the side.
