They are healthy (zucchini, spring onions, and chives), flavourful (salt, pepper, and lemon zest), and filling (Feta cheese). As a result, they are a great way to sneak in veggies and even kids love them. My friends’ kids would even ask for them specifically because they like them that much.

Ingredients for Healthy Zucchini Fritters
You will only need a few basic healthy ingredients. When I say basic, I really mean it. The ingredients needed include zucchinis, egg, Feta cheese, spring onions, chives, lemon zest, salt, pepper, corn starch, and baking powder. Just make sure to use high quality ingredients, such as organic zucchinis, because it makes a huge differences in flavour.

How to make Healthy Zucchini Fritters
Are you all set? Great! Let’s make these healthy fritters together – I promise you will love them as much as I do. Shall we?
First, I want you to grate the zucchinis into a tea towel and wring out the excess water (yes, ALL of it – it will be a lot!). Do NOT skip this step because you don’t want to end up with super soft and watery fritters (trust me, you don’t!). Once you’ve got your grated zucchini, go ahead and combine all ingredients but the corn starch and baking powder until well combined. Now add the corn starch and baking powder and mix again. As a last step, go into crazy frying mode and fry the fritters for about 10 minutes. That’s it. You’re done. That was easy, wasn’t it?

Wanna know how to serve your delicious fritters? Let me tell you. Actually, you’ve actually got several serving options. That is, you can serve them either hot as a side dish OR cold as a quick snack. Personally, I don’t have a preference as they’re delicious either way. Having said that, although the fritters are oh-so-yummy on their own, I HIGHLY recommend serving them with my Spring Onion Dip. Seriously, the combination is a PERFECT match.

Healthy Zucchini Fritters
- 2 medium zucchinis grated
- 1 large egg
- 1/2 cup Feta cheese crumbled
- 3 spring onions finely sliced
- 3 tbsp fresh chives chopped
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 tbsp corn starch
- 1/4 tsp baking powder
- First, grate the zucchini into a tea towel and wring out excess water (it will be a lot!). Add 1/2 tsp salt and and let drain for 10 minutes. Wring out all the remaining excess water.
- In a big bowl, combine zucchini, egg, Feta, spring onions, chives, lemon zest, salt, and pepper. Mix everything until well combined.
- Add corn starch and baking powder and mix again until all ingredients are combined.
- For each fritter, add 1 tbsp of the batter to pan and gently press down. Fry the fritters (over medium heat) for about 10 minutes OR until golden brown on both sides. Flip halfway through frying.
- Serve your Healthy Zucchini Fritters with Spring Onion Dip.
